Description: These courses are suitable for a variety of people who may be new employees with minimal or no prior food safety knowledge. People who handle low-risk or wrapped food or those who work in the front or back of house areas including kitchen porters and warehouse staff.
Duration: Half Day (3 hours)
Assessment Method: 15 multiple choice question examination

C.I.E.H. LEVEL 2 Awards in Food Safety in Catering, Manufacturing, Retail
Description: These courses are designed for anyone about to start or are currently working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.
Duration: 1 Day (6 hours)
Assessment Method: 30 multiple choice question paper

C.I.E.H. LEVEL 3 Awards in Food Safety in Supervising Food Safety in Catering, Food Safety for Manufacturing, Food Safety Supervision for Retail
Description: These courses are designed for Managers and Supervisors working in medium and large manufacturing or catering businesses, where monitoring procedures are a daily requirement and records maintained.
Duration: 3 Hours/Week 6pm until 9pm for 6 weeks plus one week for the exam
Assessment Method: 60 multiple choice question paper
Entry Requirements: Level 2 or currently working at / in a supervisory role

C.I.E.H. LEVEL 3 MANAGEMENT
Description: This course is designed for business owners and managers of small and medium sized catering and hospitality businesses where compliance of documented records has to be maintained for E.H.P. visits.
Duration: 1 Day
Assessment Method: Assignment
Entry Requirements: Level 2 or currently working at / in a management role in a small to medium catering or hospitality business.

Managing Food Safety in Catering, Food Safety Management for Manufacturing
Description: These courses are designed for production managers, senior supervisors, senior hygiene personnel, trainers and food business owners to meet the industry’s need for a high level of practical qualification.
Duration: 3 Hours/Week 6pm until 9pm for 13 weeks plus one week for the exam
Assessment Method: Two assignments and a written exam
Entry Requirements: Level 3 or currently working at / in a management / training role where management decisions are made and implemented.

FISH ACADEMY
Description: From sea to plate 1 day - advanced course
For Chefs and aspiring chefs who want to upgrade their skills with seafood. Identification, preparation and cooking of both fish and seafood. The course will cover classic fish dishes and more contemporary dishes which suit modern restaurant service. The day will appeal to those who wish to discover the joy of working with locally caught produce and maximise their profit margins

Schools healthy eating and Junior Chef Competition for years 9, 10, 11
One or two hour FREE seafood demonstration at your school, the session will focus on identifying different types of fish and the benefits of eating seafood in your diet

Introduction to the Junior Chefs academy
This cookery course is for children aged 13 to 16 years of age. The course aims to teach basic cookery skills in a fun way to build confidence and inspire the students to prepare cook and present themselves. At the end of the course the students will do exactly this by preparing cooking and presenting for their family. As well as cookery the course also teaches the importance of nutrition, hygiene and health and safety.
Its aim is to stimulate interest in the hospitality sector amongst the younger generation.
